Mignonette Sauce

Mignonette sauce has shallots,
cracked pepper, and vinegar.
It is served with raw oysters.

Ingredients:
1 tablespoon lemon juice
1/2 teaspoon sea salt
Freshly ground pepper
3 tablespoons finely minced shallots
1 tablespoon finely minced chives
2/3 cup good-quality red wine vinegar

Directions:
Combine the ingredients in a glass
or stainless-steel bowl.
Cover with plastic wrap
and store at room temperature overnight.
Mignonette sauce will keep for
months in the refrigerator.
This recipe yields about 3/4 cup.
