Fresh Sage Sauce

I like to use fresh herbs in my cooking.
Here is a fresh sage sauce that you can
use over breaded and cooked chicken,
veal or any type of wiener schnitzels.

Ingredients:
2 tablespoons unsalted butter
2 tablespoons minced shallots
2 tablespoons flour
3/4 cup chicken broth
1/2 cup dry white wine
1 tablespoon minced fresh sage
1/4 teaspoon salt or to taste
1/4 teaspoon freshly ground pepper
Juice of half a lemon

Directions:
Melt the butter in a sauce pan,
add the minced shallots and saute
until wilted and golden.
Stir in flour and cook for 1 minute.
Whisk in the broth and white wine
and stir well until smooth.
Add the minced sage, salt,
pepper and fresh lemon juice.
Simmer for about 5 minutes.
