Salmon and Avocado Salad

Salmon and avocado go well together
in this tasty fresh herbed cold salad.

Ingredients:
1 pound salmon fillets, poached and cooled
1 ripe avocado, peeled and cubed
1/2 red onion, peeled and thinly sliced
2 tablespoons capers, drained
2 tablespoons fresh lemon juice
2 tablespoons extra-virgin olive oil
2 tablespoons chopped fresh herbs,
(dill, basil, parsley, tarragon and/or chives)
Sea salt and ground black pepper to taste
Lemon wedges for garnish

Directions:
Break cooked salmon into chunks in a bowl.
Gently toss with remaining ingredients.
Refrigerate at least 30 minutes
to allow flavors to blend.
Serve with lemon wedges.
