This cake is easy to make and tastes great.
I made this in a 10" spring form pan.
Serve this along with your afternoon tea
with a dollop of sweet whipped cream.
Ingredients:
Butter for greasing pan
6 Granny Smith apples
3 large eggs
1/2 cup granulated sugar
1/4 cup light brown sugar
1 teaspoon vanilla extract
1 cup all-purpose flour
Ground cinnamon/sugar
Preheat oven to 350 degrees F.
Line the bottom of springform pan with parchment paper.
Butter the paper and the sides of the pan.
Peel, halve and core your apples,
then chop them into medium-sized chunks.
Place cut apples directly in the prepared pan.
Meanwhile, in a large bowl, whisk eggs with sugars
until thick and ribbons form on the surface.
Beat in vanilla, then stir in flour until
just combined to make a thick batter.
Pour batter over apples in spring form pan,
spread the batter so that it covers apples.
Bake for 55 to 60 minutes or until done.
Cool in pan for 10 minutes on rack,
then flip out onto another rack,
peel off the parchment paper,
and flip it back onto a serving platter.
Dust lightly with ground cinnamon/sugar.
