Crock Pot Cooked
Sweet & Sour Beef Meatballs

Superbowl Sunday makes me think of these.
Easy to make using frozen meatballs,
adding some pineapple and vinegar,
these are really great to serve anytime.

Ingredients:
1 pound Italian style meatballs, thawed
1 (14-oz) can pineapple chunks, undrained
2 tablespoons plain cornstarch
1/4 cup light brown sugar
1/4 cup chopped red pepper
1/2 cup cold water
1/4 cup apple cider vinegar
1 teaspoon low sodium soy sauce
1 teaspoon sweet smoked paprika
1/2 teaspoon ground black pepper

Directions:
Place thawed beef meatballs in a crockpot.
Drain chopped pineapple, reserving syrup.
In medium saucepan, combine pineapple syrup
and cornstarch until cornstarch dissolves.
Blend in pineapple, brown sugar, water,
vinegar, black pepper, paprika, and soy sauce.
Cook and stir over medium heat until thick and bubbly.
Pour sauce over meatballs and let simmer on low 3 hours.
