Years ago these bone in pork chops
were browned in cast iron frying pans.
Called Cowboy Pork Chops on the Range.
The secret is in using a bit of butter
makes for a great brown and crispy chop.
Serve this with applesauce on the side.
Ingredients:
4 bone in pork chops
1 tablespoon unsalted butter
dash of salt and ground black pepper
Directions:
Heat a skillet to very high heat
Season pork chops with salt and pepper.
Melt butter in skillet and add in chops.
Saute 2 minutes, turn chops over,
cover skillet and turn heat off.
Let the chops rest for 15 minutes.
Serve with apple sauce on the side.
