Spicy Salsa Meatloaf

Here's a different flavored meatloaf,
with a jar of salsa in the meat mixture.
The added chopped mushrooms gives
this yet another texture and flavor profile.
1 pound ground beef 85/15
1/2 cup fresh mushrooms, chopped
1/2 cup oatmeal
1/2 cup medium salsa
1 large egg, beaten
ketchup for topping

Preheat oven to 350 degrees F.
In a mixing bowl combine ground beef,
chopped mushrooms, oatmeal, salsa,
beaten egg, salt and pepper to taste.
Form into a loaf on a baking sheet.
Top with ketchup and bake for 1 hour.
Let cool 15 minutes before serving.
